RESET & REBALANCE was developed as a collaborative project between a Registered Dietitian and an e-Learning Specialist.
Laura Greenhow, MPH, RD, LDN is the owner and founder of Summerfield Custom Wellness in Wilmington, North Carolina. She earned her Master’s degree in Public Health from the University of North Carolina at Chapel Hill and completed her dietetic internships at the North Carolina Physical Activity & Nutrition Branch in Raleigh, New Hanover Regional Medical Center (NHRMC) in Wilmington, and the Caribbean Exploratory Research Center in St. Thomas.
Laura got her start in the health industry as a corporate trainer for a fitness franchise. She became certified to teach a low glycemic weight loss class and worked at a gym while she completed prerequisite coursework. While earning her Master’s degree, she worked as a Health Promotion Specialist for the Campus Health Counseling and Wellness Services. For her Master’s paper, she researched the connection between health, weight, and body image among Afro-Caribbean women in the US Virgin Islands. After graduation, Laura was appointed by Cabarrus County as the Public Health Educator for their diabetes management program. When she moved to Wilmington, Laura began working as the Nutrition Coordinator for Employee Health at NHRMC, working mainly on programming and individual counseling for diabetes and pre-diabetes management.
Laura brings 12 years of experience in fitness, wellness, and health promotion with specialties in digestive health, weight loss, and diabetes management. She is also a promoter of positive body image and emotional health as important pillars of wellness. Laura loves working with people to help make some sense out of all the nutrition information in the world and then seeing them use their new knowledge to make sustainable changes.
Rebecca Lentz, MA.Ed is an e-Learning Specialist and Director of Operations for Reset & Rebalance. She has 10 years of experience in higher education focusing on marketing, communications, and program development and management. She is also the Assistant Director of Health Sector Management at Duke University’s Fuqua School of Business.
Rebecca has a Master of Arts in Higher Education from Argosy University and a Bachelor of Science in Business Administration from California University of PA.
